Pancetta-Wrapped Pork Roast with Rosemary and Cipollini Onions - Anna

(or Bacon Wrapped Pork Roast with Rosemary and plain old onions)
  1. Defrost well in advance--take it out of the freezer the morning before you plan on making this.
  2. Make a frozen pizza for your kids!
  3. Heat oven to 350.
  4. Baste occasionally with cooking juices.
  5. Cook till 140 degrees (about 30-35 minutes).
  6. Remove from oven. Transfer pork and onions to a platter. Cover to keep warm.
  7. Put packet of sauce plus the drippings from the pork into a pan and bring to a boil.

Accompaniments:

  • quarter potatoes (put olive oil and seasoning on potatoes and bake for 40+ minutes)
  • slice apples (put in pan with butter and brown sugar)
