I thought that Feb 12th would be a good day for our 1st exchange. It is enough time away that we have time to plan and it is on a Monday so we could use the weekend prior to cook.
If it works out for you, make your meals ahead of time (ahead of the weekend) and then freeze and bring to the exchange frozen.
