Food Guidelines

(I seperated food guidelines from other guidelines which will help when we need to refer back).

Cleanliness!! Please do your best to keep your work prep area clean. Please no children helping in the food prep.

Make sure that our portion sizes are measured appropriately and accurately. (Use measuring cups and scales to make portion sizes and meals are equal.)

Use lower fat options when possible - (low fat not non-fat).

Buy ground beef that is 85% or higher for grilling and 90% or higher for baked dishes. Also use 1/2 cup of water per pound of meat when frying meat to help drain out fat.

No seafood recipes at this time.

If peanuts are included in cooking, clearly mark that peanuts or peanut products have been used in preparation.

Use 100% whole wheat products when available.

Meat:
Don't thaw frozen raw meat and refreeze it without cooking it thoroughly first.

Ground Beef: 1lb of ground beed will yield approx. 2 1/2-3 cups of browned beef.

Pasta/rice/beans: cook pastas about 1/2 the recommended time.
Cook rice about the 1/2 recommended time. Otherwise just include the box of pasta/rice with the meal and the individual can cook it when they cook their meal.
